Cheesy Pasta Bake With Bacon & Kale

Ingredients

  • 250g Cheddar Cheese 
  • 75g Parmesan Cheese
  • 500ml Whole Milk
  • 2tbs Unsalted Butter 
  • 2½ tbs Plain Flour 
  • 4 Bacon Rashers
  • 325g Conchiglie Pasta 
  • 150g Curly Kale

Equipment needed 

  1. Medium sized saucepan 
  2. Large Saucepan
  3. Cheese Grater 
  4. Measuring Jug
  5. A Large bowl
  6. Baking Dish
  7. Whisk
  8. Large Spoon ( Ideally A Wooden Spoon )

Method

1 . Bring a large pan of water to the boil ( This will be for the pasta “ Step 4”)

2. Grate the cheddar cheese and parmesan cheese into a large bowl and leave to one side for later.

3.Using a measuring jug add 600ml of whole milk and leave to one side.

4. Once the large pan of water is boiling add the pasta to the pan along with a pinch of sea salt and give it a stir. Check the packaging for cooking times ( pasta usually takes around 10 minutes to cook). With 4 minutes remaining add the kale to the pan.

5. Whilst the pasta is boiling pre heat the grill ready for the bacon

6. Turn the gas/electric hob on to medium heat and add the butter to the saucepan.

7. Once the butter has melted reduce the heat and add the flour to the saucepan and give it a good stir until the flour and butter resembles a paste 

8. Before moving onto step 9 put the bacon under the grill and grill for around 4-5 minutes on each side.

9. Now add the milk to the saucepan and using a whisk give it a good whisk for 4 minutes or until the milk starts to thicken.

10. Once the milk has thickened add half of the cheddar cheese and half of the parmesan cheese to the saucepan and give it a good stir using a wooden spoon for a minute and then turn off the heat and stir occasionally for 4 minutes. Top Tip: You may need to use a whisk to break up any big bits of cheese that are stuck together in the saucepan.

11.After 5 minutes the cheese sauce should now be done. If it is too runny add some more cheddar cheese to thicken up the sauce.

12. Once the pasta is cooked drain the pasta over the sink using a colander and then return the pasta to the large pan.

13. Cut up the bacon into small pieces and then add to the cheese sauce.

14. Now add the cheese sauce to the pan and give it a good stir so that the pasta is covered in the sauce, bacon, and kale and then add to a baking dish.

15. Sprinkle the remaining cheddar cheese and parmesan cheese on top of the pasta and grill for 10 minutes or until crispy.

16. Serve and enjoy the delicious cheesy pasta bake.

Recommendations
