Orange And Lemon Piri Piri Chicken Recipe

This is a delicious fruity chicken and vegetable meal full of flavour.

Ingredients

1 Red Pepper
1 Yellow Pepper
2 Red Onions
1 Lemon
5 Large Organic Chicken Thighs
1tsp Ground Coriander
2tbs Olive Oil
1tsp Coriander leaf
1tsp Chilli Flakes
1tsp Garlic Granules
1 tsp Paprika
1tsp Sea Salt
2 Large Oranges

Method

1.. Preheat oven to 180 degrees Celsius ( Fan Oven ) Gas mark 4 ( For gas oven)

2. Wash the peppers and then cut them into chunks along with the red onions

3. Using a large bowl add the peppers and red onion to the bowl and add 1tbs of olive oil and ground coriander to the bowl and using clean hands mix the oil and ground coriander into the peppers and onions.

4. Now transfer the peppers and red onions to an oven dish and leave to one side. Wash the large bowl ready for the next step

5. Add the Herbs: coriander leaf, garlic granules, chilli flakes, paprika and sea salt to the large bowl

6. Cut the lemon in half and squeeze 3tbs of lemon juice to the bowl along with 1tbs olive oil and then mix it all together.

7. Add the chicken thighs to the bowl and marinate evenly and then place on top of the vegetables in the oven dish.

8. Cut the orange into wedges and then squeeze half of the wedges over the chicken and vegetable and then add all the orange wedges to the oven dish.

9. Cook in the oven for 40-45 minutes. The chicken juices should run clear once done. After 20 minutes use a spoon to turn over the vegetables and chicken.

10. Delicious served with some basmati rice and garlic bread.
