Total Time28 mins
- 1 Green Pepper
- 1 Brown Onion
- 6 Closed Cup Mushrooms
- 1 Chicken Breast
- 1 Cup Basmati Rice
- 1 Loyd Grossman Balti Curry Sauce
Give the green pepper a wash with cold water over the sink and then using kitchen paper wipe away any soil left on the mushrooms
Now finally slice the onion, green pepper, and mushrooms
Using a separate chopping board for the chicken, slice the chicken breast into small chunks
Add 2 cups of water to a medium sized saucepan and turn on the hob to bring the water to the boil. ( This will be for the rice)
While the water is heating up add 1.5 tbsp of coconut oil or 1 tablespoon of olive oil to a frying pan and turn on the heat to heat up the oil.
Once the coconut oil/olive oil has heated up add the sliced chicken breast to the pan and reduce the heat to medium heat and fry for around 3 minutes or until browned making sure you stir the chicken occasionally.
Now add the mushrooms, onion and green pepper and fry for around 3 minutes or until softened. Like step 7 make sure you stir the vegetables occasionally.
Once the vegetables are done add the Loyd Grossman balti curry sauce and give everything a good stir.
Reduce the heat once the sauce starts to simmer and then wash the rice in a sieve over the sink using cold water.
Boil the rice according to the package instructions. Basmati rice usually takes around 10 minutes. Make sure you reduce the heat for the rice after 5 minutes.
Once the rice is done serve along with the curry and enjoy.
Serve with some poppadoms and peshwari naan bread.
