  • 250 grams Cheddar Cheese
  • 75 grams Parmesan Cheese
  • 600 ml Whole Milk
  • 2 tbs Unsalted Butter
  • 2.1/2 tbs Plain Flour
  • 4 Bacon Rashers
  • 325 grams Conchiglie Pasta
  • 150 grams Curly Kale

  • Bring a large pan of water to the boil ( This will be for the pasta “ Step 4”)
  • Grate the cheddar cheese and parmesan cheese into a large bowl and leave to one side for later.
  • Using a measuring jug add 600ml of whole milk and leave to one side.
    milk in a jug
  • Once the large pan of water is boiling add the pasta to the pan along with a pinch of sea salt and give it a stir. Check the packaging for cooking times ( pasta usually takes around 10 minutes to cook). With 4 minutes remaining add the kale to the pan.
  • Whilst the pasta is boiling preheat the grill ready for the bacon
  • Turn the gas/electric hob on to medium heat and add the butter to the saucepan.
    Unsalted Butter Melting
  • Once the butter has melted reduce the heat and add the flour to the saucepan and give it a good stir until the flour and butter resembles a paste
    Butter & Flour
  • Before moving onto step 9 put the bacon under the grill and grill for around 4-5 minutes on each side.
  • Now add the milk to the saucepan and using a whisk give it a good whisk for 4 minutes or until the milk starts to thicken.
  • Once the milk has thickened add half of the cheddar cheese and half of the parmesan cheese to the saucepan and give it a good stir using a wooden spoon for a minute and then turn off the heat and stir occasionally for 4 minutes. Top Tip: You may need to use a whisk to break up any big bits of cheese that are stuck together in the saucepan.
    cheese sauce
  • After 5 minutes the cheese sauce should now be done. If it is too runny add some more cheddar cheese to thicken up the sauce.
  • Once the pasta is cooked drain the pasta over the sink using a colander and then return the pasta to the large pan.
    Draining The Pasta & Kale
  • Cut up the bacon into small pieces and then add to the cheese sauce.
  • Now add the cheese sauce to the pan and give it a good stir so that the pasta is covered in the sauce, bacon, and kale and then add to a baking dish.
    Cheese Sauce Added To Pan
  • Sprinkle the remaining cheddar cheese and parmesan cheese on top of the pasta and grill for 10 minutes or until crispy.
